Everything you'd want to know about thekua
What is thekua?
Thekua — also called khajuria — is a traditional sweet from Bihar: a crunchy, dense cookie made from wheat flour, jaggery (gud) or sugar and ghee. The dough is pressed by hand into a carved wooden mould called a sancha, which gives every piece its sunburst pattern, and then fried slowly until golden. It has been made in Bihari homes for generations — for festivals, for long journeys and for everyday tea time.
How Maati Ke makes it
We cook in small batches in Purnia, Bihar. The dough is kneaded with gud, fennel (saunf) and green cardamom, pressed by hand and slow-fried in pure ghee. There are no added preservatives — thekua keeps well naturally because it is fried until very low in moisture.
Which thekua should I choose?
- Gud Thekua — Deep, wholesome and roasted in pure desi ghee — a Bihari classic. From ₹700.
- Maida Thekua — The lighter, crunchier thekua — mildly sweet and made for chai time. From ₹799.
- Multigrain Thekua — A nutty, hearty thekua made from a blend of whole grains and roasted in shuddh ghee. From ₹1,199.
- Ragi Thekua — Earthy, deep-brown ragi thekua — a millet twist on Bihar's festive sweet. From ₹1,199.
